Farmers Frittata

10 slices chopped bacon
4  oz diced onion
3 med. potatoes, cooked with skins on and diced
11 eggs
1 1/4 cup milk
1 teaspoon salt
1/4 teaspoon pepper
4 oz shredded cheddar cheese
4 oz shredded Swiss cheese

Preheat oven to 350 degrees.  Sauté bacon and onions. Drain fat. Put bacon mix in the bottom of a greased 10" quiche pan.  Sprinkle diced potatoes over.  Beat eggs and milk, then add salt and pepper.  Pour over potato mix. Sprinkle with cheeses.  Bake 1 hour and 15 minutes.
